Training – ISO 22000:2018 Requirements

In food safety, knowing the standard
is not enough.
You must understand the hazards and know how to manage them.

This course develops a practical understanding of ISO 22000:2018 requirements and how to apply them in an organisation operating within the food sector. We combine the standard’s requirements, HACCP logic and industry operating realities so that participants can move beyond understanding the system’s structure and translate it into day-to-day controls, risk-based decisions and product safety.

Identifying the need

Why do organisations
need a stronger understanding of food safety?

The standard may be familiar, but practical application is more difficult

In many organisations, the problem is not access to ISO 22000 requirements. The real challenge is translating them into operational processes, control points, evidence, decisions and clear day-to-day accountability for food safety.

HACCP may exist formally without operating as an effective system

The HACCP principles alone do not ensure effective control unless they are embedded within a coherent management system. Without this structure, the organisation can lose visibility of hazards, responsibilities, controls and preventive action.

The contribution of the HACCP leader and other responsible personnel is often underestimated

An organisation may have appointed people responsible for food safety, but without appropriate preparation they can struggle to maintain the system, coordinate activities and support sound operational decisions.

Legal requirements are dispersed and difficult to monitor consistently

Food-sector organisations need to understand not only the standard, but also the current legal requirements applicable in Poland and the EU. Without effective monitoring, the system can become incomplete or excessively focused on documentation rather than operational control.

Teams do not always understand the relationship between ISO 22000 and ISO 9001

Where an organisation is familiar with quality management systems but does not understand their links with and differences from food safety management, implementation can become fragmented and more difficult to maintain effectively.

Poor understanding of requirements creates costs that are not always immediately visible

Misinterpreted requirements, insufficient organisational preparation and weak hazard control increase quality, operational and reputational risk.

Our training approach

We train participants
to understand the system and apply it in practice

This is not simply a clause-by-clause review of the standard. We design the programme so that participants understand the logic of ISO 22000:2018, can relate its requirements to their own processes and can support the informed implementation, maintenance or improvement of a Food Safety Management System. The course therefore builds not only knowledge, but also the organisation’s capacity to make sound operational and risk-based decisions.

Training scope

  • Requirements and structure of ISO 22000:2018
  • The seven HACCP principles in relation to the standard’s requirements
  • Role and responsibilities of the HACCP team leader under ISO 22000:2018
  • Current food safety legal requirements applicable in Poland and the EU
  • Challenges associated with implementing an ISO 22000:2018 management system
  • Links and differences between ISO 22000:2018 and ISO 9001:2015
  • Embedding requirements into the organisation’s operational processes

What you gain

  • A clearer understanding of the standard: participants learn to interpret ISO 22000 requirements not only at a formal level, but also in the context of the organisation’s actual food-sector processes.
  • Greater readiness to support the system: the course supports current and prospective ISO 22000 management system representatives and people leading food safety activities.
  • Stronger HACCP awareness: the team develops a better understanding of the seven HACCP principles and their practical significance for product safety controls.
  • A better understanding of legal requirements: the organisation gains a clearer view of the regulatory environment relevant to food safety.
  • A stronger systems approach: the organisation gains a better understanding of how ISO 22000 requirements connect with its processes and with experience gained from other management systems.
  • Confirmation of attendance: after completing the course, each participant receives a certificate of attendance and training materials.
